Our Cheeses are made using unpasteurised milk from our own dairy cows, this gives them their own unique flavour. They are both classified as hard cheeses as the curds are pressed for over 16 hours. They are named after the river meadows on the farm. Each whole cheese truckle weighs between 3.5 - 5.0kg.
The distinctive flavour of Shipcord arises from the use of raw unpastuerised milk; while scalding the curds and whey at a higher temperature than usual gives a more robust texture to the cheese. Shipcord is matured for at least 5 months and our Extra Mature Shipcord for approximately 12 months. For those who enjoy smoked cheese we oak smoke Shipcord in small batches.
Hawkston is loosely based on the so called 'crumbly terratorials' such as Cheshire and Caerphilly. In Hawkston the natural acidity of this style of cheese is combined with the richness of our pure whole milk to create another distinctive cheese. Hawkston is carefully matured in our maturing room for 3-6 months.
The British Cheese Awards
The British Cheese Awards take place annually, with over 900 cheeses entered. In 2007 both our cheeses were awarded bronze medals, and in 2008 Shipcord was awarded a bronze medal. Our cheeses were awarded silver medals in 2009 and 2010.
